Growing up, every summer my family would go to South Padre Island for vacation. It’s no Outer Banks or whatever those college kids went for Spring Break, but it’s got character. If you were under the age of 12, you were designated to sleep in the living room where my sisters and I would pack our sleeping bags tightly together like sardines. There were so many cousins, some of us slept under the kitchen table!
All this to say, I remember playing all these games at the condo pool and one of them was a watermelon seed spitting contest. Since I was probably five years old, I never won, but remember spitting my little heart out. Don’t you love the games we made up in the 90s to occupy ourselves? Before those darn iPads.
Now with a refined palate, watermelon is like eating pizza but it’s healthier, right?! But in all seriousness, I love it – juicy, sweet, crunchy, all of it. I also love margaritas, and for those that know me, you know I’ll always opt for mezcal over tequila. So, I thought, why not combine the two to make watermelon margarita popsicles?
These homemade popsicles are sweet, refreshing, boozy and have a touch of citrus. You’ll take one lick and BAM. You’re hooked. Trust me.

What type of alcohol should I use?
I’m a big fan of mezcal, but you can definitely use tequila. This is a favorite I like to keep on my shelf. If you’re wondering what the difference is, mezcal is like tequila’s smokey, more attractive cousin.
How do I pick a ripe watermelon at the grocery store?
This is fascinating. You want to pick a watermelon that has a deep yellow-ish splotch on it which indicates it rested on the ground and basked in the sun gaining more juices. When you knock on the watermelon, if it has a hollow sound, it means it’s filled with water! One additional thing to check is its stem. If it’s brown, it means the watermelon was picked when it ripened on the vine. So, what do you want? A big yellow splotch, a hollow sound and brown stem.
