Red, white & blue popsicles

These beautiful red, white & blue popsicles are filled with fresh fruit, greek yogurt and a touch of honey. Resembling my 90's favorite Bomb Pops, these are healthy and delicious!

Ingredients

Red layer:

  • 1 1/4 cup tart cherries, pitted
  • 1 tablespoon honey
  • 2 tablespoons greek yogurt

White layer:

  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 2 tablespoons greek yogurt
  • 1/2 lemon juice, freshly squeezed
  • 1/2 cup canned coconut milk

Blue layer:

  • 1 cup fresh blueberries
  • 1 tablespoon honey
  • 2 tablespoons greek yogurt

Instructions

  1. Red layer: In a Nutribullet or blender, combine tart cherries, honey and greek yogurt. Blend. Pour about 2 tablespoons of cherry puree into each popsicle mold. Freeze for 30 minutes, or until set.
  2. White layer: Combine vanilla, honey, greek yogurt, lemon juice and coconut milk into blender. Pour about 2 tablespoons of juice into each popsicle mold. Freeze for about 30 minutes, or until set. Remove mold from freezer and add popsicle sticks.
  3. Blue layer: Combine blueberries, honey and greek yogurt into blender. Pour about 2 tablespoons of blueberry puree into each popsicle mold. Freeze for at least 6 hours or overnight, for best results.
  4. Enjoy these homemade bomb pops!
Recipe Notes:
  • I suggest preparing these a full day in advance before eating them so you can allow time for their overnight freeze!
