Mimo's Fluffy Waffles

Crispy on the outside, fluffy on the inside – this is what waffle dreams are made of. My grandma's legendary recipe will surely covert any pancake lover into a newly reborn waffle fanatic.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder 
  • 1/2 teaspoon salt
  • 1 cup whole milk 
  • 1 cup of canned evaporated milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla 
  • 3 large eggs, yolks and egg whites separated (room temperature)
  • 2 tablespoons sugar 
  • PAM baking spray
  • Toppings: Buttermilk or maple syrup, powdered sugar, strawberries

Instructions

  1. Preheat oven to 175 degrees Farenheit and preheat waffle iron to highest setting.
  2. In a large mixing bowl, sift and mix the flour, baking powder and salt.
  3. In another bowl, beat the egg yolks. Add and whisk in milk, oil and vanilla until well-combined.
  4. Add wet ingredients to bowl of dry ingredients slowly. Stir to combine, but don’t over-mix. There should be a few small lumps of flour in batter.
  5. Whip egg whites in kitchen aid until foamy. Add sugar, then beat until soft peak forms.
  6. Gently fold the whipped whites into the batter. There should be small to large clumps.
  7. Spray the waffle iron with PAM and pour in batter. Cook according to waffle iron instructions. Once cooked, place directly on oven rack to keep warm and cover with foil.
  8. Once ready to serve, remove from oven and add your favorite toppings!
