Mimo's Fluffy Waffles
Crispy on the outside, fluffy on the inside – this is what waffle dreams are made of. My grandma's legendary recipe will surely covert any pancake lover into a newly reborn waffle fanatic.

Ingredients
- 2 cups all-purpose flour
 - 2 teaspoons baking powder 
 - 1/2 teaspoon salt
 - 1 cup whole milk 
 - 1 cup of canned evaporated milk
 - 1/3 cup vegetable oil
 - 1 teaspoon vanilla 
 - 3 large eggs, yolks and egg whites separated (room temperature)
 - 2 tablespoons sugar 
 - PAM baking spray
 - Toppings: Buttermilk or maple syrup, powdered sugar, strawberries
 
Instructions
- Preheat oven to 175 degrees Farenheit and preheat waffle iron to highest setting.
 - In a large mixing bowl, sift and mix the flour, baking powder and salt.
 - In another bowl, beat the egg yolks. Add and whisk in milk, oil and vanilla until well-combined.
 - Add wet ingredients to bowl of dry ingredients slowly. Stir to combine, but don’t over-mix. There should be a few small lumps of flour in batter.
 - Whip egg whites in kitchen aid until foamy. Add sugar, then beat until soft peak forms.
 - Gently fold the whipped whites into the batter. There should be small to large clumps.
 - Spray the waffle iron with PAM and pour in batter. Cook according to waffle iron instructions. Once cooked, place directly on oven rack to keep warm and cover with foil.
 - Once ready to serve, remove from oven and add your favorite toppings!
